4 slices of bread
500 g of fresh peas (weight with pods)
juice of 1/2 lemon
parsley or coriander
We begin by removing the peas from the pods. We put them in a glass to grind and we incorporate a little salt, lemon juice, parsley or coriander and extra virgin olive oil. Grind well and put aside.
On the other hand cut the bread and roast. Meanwhile boil the eggs.
To build the toast, we spread crushed peas. Cut the eggs in half and put one half on each toast and a slice of mozzarella. We ended up with a little salt flakes and serve.
Make it spicy adding some cayenne or curry on top.
